Done until one-shot deaths are addressed

One shot deaths happen all too often in this game due to things that you can't even see coming or anticipate to react too. Stuff from off screen, stuff just dropping on you out of nowhere, stuff just appearing under you and blowing you up. My main character is in the 90s and very well equipped; however, this madness just continues all too often.

fixed? that would suggest its a bug.

Started the league with a huntress and couldn't solve this. My Lich char then had 2k life and 10k ES and still got hit for 8-9k out of nowhere. Finally able to tank it but makes it clear why classes with less defenses struggle.

Yes, it is noticably more difficult to get great survivability since 0.2.
I was running shockcaller arrow on my deadeye since the beta started, killing significantly slower than the lightning arrow builds, but it felt great nonetheless since i was still able to level past 90+.
0.2 dropped for me when i was at 95 and i started dying every few maps since then, so i recently caved in and switched to lightning arrow. That gave me a significant damage boost and helps me to stay alive.

But even though i now have about 1500 life, 2500 shield and on average (when not debuffed) about 78% -> 80% evasion AFTER acrobatics (evade all hits), i still die just enough to not level up anymore.

I feel a large part of the problem is the nerf to acrobatics. They upped it from 70% less evasion to 75% less. The wind dancer nerfs, i can still somewhat follow, but when you're talking about numbers in the thousands such as for evasion, an additional 5% reduction on top is just so incredibly impactful. It's also equally impactful for builds running much less powerful gear due to the diminishing returns on EV, which doesn't seem fair.
It's important to keep in mind as well that they just keep adding all these different debuffs that are capable of lowering (maim, blind, ..) or even completely eliminating your evasion (hobbled, monsters attacks having 'cannot evade', trials mechanics, ..).

It also takes away a lot of the fun of finding what should be significantly better gear, since even if i added another 500 flat evasion, it would at most add me 1 more percent.
I am assuming that next to the diminishing returns on EV, there is also some kind of hard cap on it, but i'm not sure.
If not, then why not implement one and undo the nerf to acrobatics ?
It would make finding gear upgrades feel better again yet still prevent people reaching near-immortality ...

Invest in Eva/es and a good amount of Hp. I haven’t died since level 92 and I’m 95 now. Only thing that can kill are some specific mobs during breach (easily dodgeable) or during a ritual when a bunch of chaos orbs corner you.
One-shots are player progress limiter mechanic. Every time I progress too fast the game tries to annihilate me.
Just watch 'Experience per hour' meter in progress bar and everything will be clear.

Its level set near 8-10 millions per hour.

Unless you are doing maps with uncapped chaos resist on a hybrid char or running maps with crazy mods like 25% elemental penatration or 3 dmg mods, I don't believe you. And if you are doing that, well, it is just as expected.
